Like I had said before, one of the entries will be chosen as the WINNER  of the event!!! Of all the received entries ,13 entries have been short listed as the FINALISTS!!!!! My plan, initially, was to pick exactly 10 entries. But the entries were all so good that choosing among them was almost impossible for me. I had to finally take Naveen's help on this - who, by the way, is really hard to please.... So, all you finalists are winners already!!! :)

Anyway, since we HAVE to pick just one entry, I would like to leave the job of picking ONE WINNER to the readers of Mane Adige!!!! I will post a poll on Mane Adige with the short listed entries. Ginger Chutney By Nirupama Sundar

        Ginger_Chutney_(Allam_Chutney)

Ever since I announced the "Chutney/Dip Mania" Event , I have been receiving tremendous response from everyone!!! One of my readers, Nirupama Sundar, sent across this flavorful and healthy  ginger chutney recipe as an entry to the event. She even sent across a picture with the recipe.... Thanx so much, Nirupama!! :) This is a great entry! Since she does not maintain a blog, I am posting this entry on her behalf. Here goes the recipe, in her own words...

Ingredients:

Chopped Ginger  1 table spoon
Dried Red Chilies (Bedagi) 5 Nos
Curry Leaves        1 Tea Spoon
Broken Urad Dal   2 Tea Spoons
Jeera                   1 Tea Spoon
Tamarind              1 small lemon sized
Jaggery                1 Table Spoon
Oil                       2 Tea Spoons
Salt to taste

Method:

1. Heat Oil in a Kadai.
2. Fry the Red Chillies and keep them aside.
3. Roast Urad Dal and Jeera and keep them aside. 
4. In the remaining oil saute the ginger pieces and curry leaves for 2 to 3 mins.
5. In a blender (mixie) add all the above ingredients alongwith Tamarind, Jaggery and Salt (to taste)
6. Grind it to a smooth paste

Tadka
Mustard - 1/2 Teaspoon
Broken Urad Dal - 1/2 Teaspoon
Curry Leaves - Few
Oil - 1 Teaspoon
Make the Tadka with the above ingredients and the chutney is ready to serve.

This is a typical Andhra dish but the Bedagi Chilies are not so hot.  Therefore it gives a bright red color to the chutney. You could even use 1/2 tsp of paprika  for the color.

Nimbekai Chitranna/Lemon Rice

         

Lemon rice, known as Nimbekai Chitranna in Kannada,  is one of the most commonly made mixed rice varieties in Karnataka. Chitranna ( meaning "mixed rice" in Kannada) is a speciality of Bangalore-Mysore regions of Karnataka. It is usually made during festivities and certain special occasions..... You usually get to hear people saying 

"Ivattu, nanna magalu hostel inda manege bandidaale. Adikke, Chitranna-payasa maadidde!!"  meaning, my daughter is back from the hostel today, So I made Chitranna-Payasam.... Or

" Ivattu habba alwa, adikke chitranna maadidde" meaning, I made chitranna for the festival today.... :)

What I am trying to say is this - mixed rice varieties, called chitranna or bhaat, is synonymous with festivities and celebrations in Karnataka. Lemon rice is the most famous among them all. There are different ways of making it. While all versions taste great, here's the one that I like most. It also makes for a splendid one pot meal!  Off this goes to FIC-Yellow event happening at Tongue Ticklers...

Ingredients:

2 cups cooked white rice

1/4 cup Grated coconut, fresh/frozen

1/2 a medium sized Onion, finely chopped (optional)

1 tbsp Lemon juice

2-3 Green Chilies

1/4 tsp Mustard seeds

1/2 tsp Turmeric

1/2 tsp Sugar

Salt as per taste

Cilantro for garnishing

For tempering:

2 tsp Oil/Ghee

1/4 tsp Mustard seeds

3-4 Curry leaves

2 tsp Peanuts

1 tsp Urad-Chana dal mixture

A generous pinch of Hing

Method:

  1. Grind coconut, green chilies, mustard seeds and turmeric to a coarse mixture; ; DO NOT add any water while grinding; Keep aside.
  2. Heat oil in a pan; temper with all the ingredients mentioned above; Add finely chopped onions and saute until they turn translucent.
  3. Add the coconut-green chili masala and stir-fry for a minute; Saute continuously and keep in mind not to burn the masalas.
  4. Add cooked rice, salt, sugar and mix well.
  5. Switch off the stove; Add lemon juice and toss until it mixes evenly.
  6. Adjust ingredients according to taste; Garnish with chopped cilantro and serve.

Prep Time: About 20-25 mins;

Serves: 2-3 people;
