HuLi PuDi/Sambhar Powder
Ingredients
1 cup Coriander seeds1/2 cup Chana Dal/Kadle beLe
1/2 cup Sona Masoori Rice (akki)
2 tsp Methi Seeds
2 tsp Jeera Seeds
1 cup Byadagi Menasinakai - cut into smaller pieces
Hing/Asafetida - if using powder then use a generous amount, about 1 tsp. if not, a tiny lump should be good
Method:
Roast each of the ingredients separately until you smell the aroma of spices;
Let cool completely.
Once cool, powder in a dry blender and store.
Tip:
Do not keep the flame too high; keep on medium flame so that the spices don't get burnt
Make sure that the methi seeds are well roasted; otherwise the sambhar powder could get bitter
