Maddur Vade


Well, I am not going to go into the details of how Maddur Vada (Vade) got its name and that its actually a place near Mysore :)..... I googled for Maddur Vada and found that there are a whole lot of blogs and websites giving the recipe and the background information! So, I'll directly head to my version of the recipe. I'd like to tell you all that I actually intended to make Nippattu.... But when I was midway through mixing the ingredients, I changed my mind and decided to make Maddur vade. So, you might see a few pieces of peanuts on my Maddur Vade ( We usually dont add peanuts to Maddur Vade)... I hope you understand :D


Ingredients:

1 cup Rice flour

1/2 cup Maida/All purpose flour

1/2 cup Fine Rava/semolina

1 Onion, medium sized- finely chopped

1 tsp Red chilli powder

1 tsp Jeera

2 tsp Hot oil

1-2 strands Curry leaves, chopped

A generous pinch of hing

Salt as per taste

Oil for deep frying

Method:

  1. Mix all the ingredients together in a mixing bowl to form a dough; Add water little by little while mixing ( Lesser the water you add, crispier the vadas)....
  2. Pull out lemon sized balls from the dough and make round patties with the help of your hands.
  3. Heat oil in a pan and deep fry the patties until they turn golden brown in color.
  4. Remove from oil and drain on paper towel; Serve hot with green/coconut chutney and enjoi!

Yummy! i always used to get these on the way to (and back from) Mysore :). The best thing is the crispy flavor with onions :).

Haha! very clever! Did you get the cravings for Maddur vade midway to making Nippattu? :D
Peanuts are not bad idea to add even if it's not traditional. If yu check the RCI K 1 st round, you will get variations of this.
Looks delicious, I haven't made these in a while. Enjoy, love the chutney too!:))

hehe... nijavaaglu!!! maddur vade tinbeku antha tumba annistu. So, plan change maadibitte :D. Will have a look at RCI K roundup sometime....

I've never made this before but seen it in some blogs. Your presentation is beautiful. Is the addition of peanuts your own touch? I don't remember seeing it in others. Looks super good.

Looks delicious. I have nevr had this vada. Always ate the dal vada. Would be excelent with a cut of hot tea yummy

I have had this on to & from trip to Mysore.. Its lovely & yummy. Theres a famous road side eatery there.. cant remember the name.. Nice hot & strong Filter coffee & these vadas.. wow!! so yummy they were.. still remember the taste..

I am doing just fine babe. Wasn't keeping well for a while. Maddur vada thinno bayake nange agtha iratthe . You will find a different version of this in my blog as well. Love it. Perfect for winter. Yakamma aase barsthiya hinge?

Wow Ramya. Tumba channagidde! I usually make this with little differnt proportion of the flours. But what is amazing is you have not used baking soda and yet mmanaged to get this crispy!

Mmmmmm yummy!! Thank you for that awesome recipe Ramya, just made some Maddur vade following your recipe. Turned out great and so easy too, if only I had discovered your site sooner!!
