Palak-Corn/Spinach-Corn Soup
Couple of weeks back, one of our friends had invited us over for dinner and that was where I had Spinach soup for the first time. Naveen and I loved it instantly!! I decided to come home and try it myself sometime.
And I finally made it over the weekend!!! Weekend was cold and rainy ...And the weather was perfect for us to relish a hot bowl of soup. Ingredients:
1 bunch Fresh Spinach
1/2 cup Sweet corn kernels
1 Tomato, small sized
1 Onion, medium sized
2 tsp Butter
3-4 Cloves
2" Cinnamon stick
1" Fresh Ginger

3-4 tbsp Whole Milk
1/2 tsp Black pepper, powdered
Salt as per taste
Method:

Method:
- Wash and cut spinach leaves into pieces. Cut onions and tomatoes into chunks
- Cook spinach onions and ginger in salt water until they become soft and are cooked. To this, add tomotoes, a little before the spinach and onions are done.
- Switch off the stove after the veggies are cooked and let it cool.
- Meanwhile, heat 1 tsp butter in a kadai and add cloves and cinnamon. Saute for a minute and keep aside.
- Cook corn kernels in microwave for about 3 mins or until they are cooked and keep aside.
- Blend together spinach, onions, tomatoes, ginger and cloves-cinnamon.
- Add corn and milk to the above spinach mixture and bring to boil on stove. Add water if required.
- Add salt and pepper and serve hot with butter!
