Ragi / Raagi Mudde (Finger Millet)


"Hittam thindam bettam kithettam".... is a kannada saying which means, the one who eats raagi mudde has the strength and power to move hills!!! Originated in the old mysore region of Karnataka, Raagi Mudde is a very popular dish in almost all the rural parts of Karnataka, especially in mysore-mandya regions.
Raagi (Finger Millet, in english), as you all know is very rich in iron content and is very low on fat and calories. Raagi mudde is very filling and thats why it is also the staple food of farmers. Moreover, its so fast and easy to make that your meal will be ready in just a few minutes!!!

I still distinctly remember the first time I tasted raagi mudde..... It was at one of our relative's place in Mysore. I was really young then and it was the first time I had heard of or seen raagi mudde. I was surprised how their entire family was relishing those ugly looking raagi lumps.... My aunt forced me to try it out and I reluctantly picked up a small piece. She instructed me to roll the raagi mudde piece in sambhar gravy and swallow it directly without chewing. I started liking it after having a few pieces and have never stopped liking it till date!!! My mom used to make it for me regularly since then and now, I've started making it myself.

Eating raagi mudde which was once considered below status, is now becoming a style symbol. You get to see raagi mudde mess opening up all over the country, including the capital city of Delhi!! Former Prime Minister Mr. H.D Deve Gowda was reputed to serve a ragi mudde that tasted as if it had been made in Mandya, the Vokkaliga belt of Karnataka. When he was in power, it is said that he even had a separate cook imported from his home town, and even a separate kitchen just outside the main kitchen, for making raagi mudde!! Thanx to our ex-PM for having made this healthy and sumptuous dish famous all over India :)
Raagi mudde-Soppina saaru (green leaf curry) is the most famous combination. However, raagi mudde can be eaten with any gravy or curry. I made green beans sambhar this time. In the rural areas, it is also eaten with crushed green chillies, salt and onions. So, you can choose any side dish of your choice. Here's the raagi mudde recipe.. Enjoi!!

This will be my entry for Nupur's 'R' of A-Z of Indian Vegetables.

Ingredients:

1 cup Ragi /Finger millet flour
2 tsp Oil
Salt as per taste

Method:
  1. Mix 1 - 1.5 tsp of ragi flour in 1.5 cups of water; Add 2 tsp oil and salt to the mixture.
  2. Heat the mixture in a kadai and bring it to boil. Add the remaining ragi flour, stirring continuously so that no lumps are formed. Ragi should form a single mass.
  3. Close and cook on low heat for about 1-2 mins.
  4. Remove from stove; Wet your hands and make ragi balls of desired size while it is still hot.
  5. Serve hot with any gravy/curry of your choice and enjoi!!

Note: To eat, pull out tiny balls of ragi from the ragi mudde; roll it in the gravy and swallow without chewing.

Great read and about Deve Gowda's culinary preference too.My husband who is from Sakleshpura coffee estates,still doesn'tlike it and in-laws still think it's lowly!!Their loss,right?;D
I have Mudde too at FH with Moolangi Gojju, my Mysore granmother's style.Sometimes I make it just for myself and have it for lunch.Looks lovely.We also eat with Uppin saaaru made with Alasande rasa,green cillies,garlic.Yummy:)

wonderfull entry ramya, nice writeup too! i still am somehow never got used to raggi mudde but i love all others malt, roti, mani one of my favorite. i still do nu how to swallow it ha ha :)

couldn't believe ragi got lowest position..In Kerala, this is considered as a nutritious food, and make Pathiri, puttu,dosa,cereals etc with this..especially for kids and aged..thanks for a different recipe..

hmmmmm, Mudde photo chenagi bandide. Namma maneya weekend dish, esp in the afternoon. As you rightly said, soppinasaru is the ultimate combo with ragi mudde. Another fact is it is a great diabetic food.

hehe :D yeah... this ones got the no chewing rule!! thats bcoz ragi would be sticky and it would stick to your teeth if you tried chewing. Besides, it doesn't have any masala. So, it would not have any great taste without the gravy!!

I have heard a lot about this dish. lot of kannadiga friends have this. tasted it when I was very young. they also say that they have it with meat gravy right?

wow! yummy raagi mudde......photo nodi baayalli neerurtha idhe:) I just love Raagi mudde-soppina huli combo and also the taste of the huli after the mudde is all over...raagi adds the extra flavor to it:) its been a while since I made it.....will surely make it this week....
The reason it has to be swallowed and not chewed is maybe because its very sticky and tends to stick to your teeth.

I would appreciate if you can give simple Karnataka recipes for pregnant ladies.Especially women like me who live in other countries and dwhose parents are not alive to look after. It will be wonderful. Types of food that could be eaten during morning sickness. Right now I am pregnant and I feel so tired to cook and I cannot eat hard food. Right now I drink only ragi ganji. My tongue tastes so bitter. Please give some simple and digestable karnataka recipes for pregnant ladies.

It is better swallowed after you dip it in the curry.
If chew, it sticks to the teeth and tongue. It is difficult to remove it from the groves in between teeth.
In fact there is no NEED to chew.
Its fragrance is what makes it appetizing. Fragrance is less in case of cooked rice. If some one does not like swallowing mudde, they can make rotis or even dosai (DOse).
Adding a little salt and good ghee makes, while cooking, it smells nicer and and easier to roll in to balls.

nice to see a writeup on my fav Ragi mudde. I'm frm a farming family from old Mysore region & have been eating ragi mudde since childhood. Among the non-vegetarians (no offense to vegetarians here), its an amazing combo with mutton curry.
there r few subtle variations in the mudde that I've observed. In Bengaluru region the mudde is prepared from just ragi. While in Kolar, a add good amount of rice is added making it lot more chunkier & giving it a different taste..
I've been out of India for almost 1 yr now & haven't eaten mudde since. I'm really missing it.. :(

i never ever imagined that raagi mudde is so popular, but now i shud say, ragi mudde is quite a star, and like most of you, i was introduced to this by my grand ma, and of course in mysore, now i make it myself for dinner every day, it makes me at home in an otherwise foreign land.
